I made fish tacos the other night and they're easy enough for any man or woman who may or may not know how to cook to make them. It's pretty much "stupid" easy, but the simple recipe reveals scrumptious fish without all the fat (I opted to not bread my fish, thus upping the ease on the recipe). Okay, here it goes.
FISH TACOS (feeds 2-3)
1lb Halibut (make sure it's boneless or pull the bones out by hand - yuck!)
1/2 can of light beer
1/4 c chopped cilantro
1 Tbs Taco Seasoning
Put the fish in a shallow pan, cover with beer, cilantro and taco seasoning. Let it sit about 10 minutes.
Throw the fish in a pan on medium/high heat. Cook it about 10 minutes or until it's fully cooked and no longer translucent (it won't really break apart until it's cooked). Break the fish apart into chunks.
Serve it on warmed corn tortillas with all your favorite trimmings. Yum! Easy as pie (or fish tacos).
Note: You can use the extra taco seasoning in the water of white rice to make mexirice and in black beans (you can also add the other half of the beer to the beans if it's not gone yet).
